Dry-fried green beans
Ingredients
Main ingredients: 300g green beans, 100g minced pork, 6-7 dried chili peppers, half a head of garlic, 1 tablespoon of salad oil, appropriate amount of Sichuan peppercorns, a little ginger.
Seasonings: 1 tablespoon of light soy sauce, half a small spoon of salt.
How to make dry-fried green beans
1. It's better to choose slender green beans, as they cook faster. Wash them, break them into long sections, and then drain the water. Be sure to drain them as thoroughly as possible, otherwise, oil will splatter when you deep-fry them later. Using kitchen paper to absorb the moisture is a quick method.
2. While the green beans are draining, prepare the other ingredients. You'll need half a head of garlic; the more you use, the better it tastes. Chop it and set it aside.
3. You'll need about 100g of minced pork. Fatter pork is tastier and more fragrant after being dry-fried.
4. Cut the dried chili peppers into sections and set them aside.
5. Heat a wok with a generous amount of salad oil. The green beans must be deep-fried until thoroughly cooked; otherwise, they can be poisonous, which is very important. Also, green beans absorb a lot of oil. Using more oil during the dry-frying process helps to sear out their fragrance, making them tastier.
6. Stir-fry for about 3-4 minutes. Make sure the edges of the green beans are wrinkled and some of the skins are dry and slightly browned; this is how you know they are fully cooked.
7. Leave only a small amount of the remaining oil in the wok; you can save the excess for other dishes. After removing the green beans, add a small amount of the base oil to the wok and stir-fry the minced pork. Stir-fry until the pork turns white and becomes minced, then continue stir-frying until it turns golden brown. Push the pork to the side of the wok, then add the ginger, garlic, Sichuan peppercorns, and dried chili peppers to stir-fry.
8. Add a small amount of light soy sauce, then add the stir-fried green beans. Add a little salt, stir-fry everything together, and then it's ready to be served.
Cooking Tips
If you don't like Sichuan peppercorns, you can first deep-fry them in the base oil after the green beans are done, then remove the peppercorns before stir-frying the minced pork.
