Honey jujube tea is essentially a beverage made by combining honey and jujubes. Both honey and jujubes are beneficial for our health, and their combination provides excellent health benefits.

Korean-style Honey Jujube Tea

Method One:

1) Wash pitted jujubes, tear them into a few pieces, add a few rock sugar cubes and a spoonful of water to a pot, and simmer over low heat. Stir with a spoon until the sugar dissolves, and cook the mixture until it becomes thick and sticky.

2) Scoop the jujubes into a small jar to cool.

3) Pour honey into the small jar. Watch as the honey slowly seeps to the bottom of the jujubes, completely covering them.

4) Cover the jar. Wrap plastic wrap around the lid and secure it with a rubber band.

5) Place it in the refrigerator for three nights. For pitted jujubes, after removing the pits, the jujubes and goji berries should be steamed first. Then, brown sugar, goji berries, honey, cinnamon powder, longan meat, and pure water are put into a blender and blended. Afterwards, place it in a sterilized container and refrigerate. 1) 2 cups of pitted red dates, soak in warm water for half an hour, then wash clean. 2) Put the red dates into a blender, add one cup of water, and blend into a paste or chop finely. 3) Pour the blended paste into a pot, add rock sugar, and then add another cup of water. 4) Cook slowly in a saucepan or use a rice cooker to boil off the excess water until it forms a paste. 5) When it has cooled to a warm temperature, mix in honey, adjusting the consistency to your liking.

6) Mix with water to drink, or add a spoonful to your congee in the morning.

Method Two:

Honey Jujube Tea [Ingredients] 150g dried red dates, 50g rock sugar, 250ml honey, 350ml water.

1. Rinse the dried red dates under running water to remove surface dirt. Use a small knife to halve the dried red dates and remove the pits.

2. Place the pitted dried red dates and rock sugar into a small saucepan, add water. Bring to a boil over high heat, then cover, reduce to low heat, and continue cooking until all the liquid has evaporated (about 30 minutes).

3. Use an electric mixer to directly beat the red dates in the saucepan into a red date paste. Continue to cook over low heat to evaporate any remaining moisture.

4. Once the red date paste has completely cooled, transfer it to a clean glass jar. Pour in the honey and mix well with a small spoon.

5. To serve, take 2 teaspoons (about 10g) of the honey jujube paste and place it in a cup. Pour in warm water and stir to mix.
