Yam Chicken Soup
1. Green Assorted Stir-fry
A few slices of lean pork, 2 fresh shiitake mushrooms, 4 button mushrooms, 3 oyster mushrooms, 2 abalone mushrooms, 1 carrot, 1 teaspoon of green tea powder, 5-6 sections of scallion, and an appropriate amount of salt and starch. Wash and slice all the mushrooms and carrots. Mix the pork slices with dry starch, add salt, and blanch in boiling water until the color changes, then remove. Next, blanch the mushrooms in boiling water until semi-cooked. Heat an appropriate amount of oil in a wok, stir-fry all the sliced ingredients except the pork, add green tea powder and mix well with the pork. Add 1 cup of boiling water or stock and simmer to blend the flavors. Then add the scallions, salt, thicken the sauce, and serve.
2. Black Tea Yam Congee
50 grams of yam, 15 lotus seeds, 100 grams of japonica rice, 2 grams of black tea, and an appropriate amount of rock sugar. Peel the yam, put it in a plastic bag and crush it, then chop it finely. Wash the japonica rice. Boil the black tea and lotus seeds in water, then add the japonica rice and yam, simmering into a congee. Add rock sugar before serving.
3. Oolong Scallop Soup
A few fresh scallops, half a white radish, half a carrot, 3 florets of broccoli, 2-3 grams of oolong tea, and an appropriate amount of salt. Wash and cut the white radish, carrot, and broccoli into small pieces, set aside. Boil the scallops in water for 5 minutes, then add the white radish, carrot, broccoli, and oolong tea. After it comes to a boil, add salt and simmer for 2 minutes.
4. Yam Chicken Soup
200 grams of yam, 1/3 of a chicken, 200 grams of shiitake mushrooms, 1 honey jujube, 2 slices of ginger, and 5 longans. Cut the chicken into pieces, the iron yam into irregular chunks, and prepare the ginger slices. Heat a little vegetable oil in a pot, add the chicken pieces and ginger slices. Stir-fry the chicken until it changes color, the meat tightens, and the skin is slightly browned. Transfer the stir-fried chicken to a slow cooker, add an appropriate amount of boiling water. Add the iron yam chunks, cover, and simmer on low for 2 hours. Then add chicken liver, gizzards, and other chicken offal, cover, and continue to simmer for another 20 minutes. Finally, season with salt, pepper, and add an appropriate amount of goji berries.
