Cilantro Stalks Stir-fried with Pork Tripe
Ingredients: 200g cooked pork tripe, 150g cilantro, 1000g light oil (approx. 100g used), 25g cooking wine, 3g salt, 5g MSG, 10g rice vinegar, 2g each of shredded ginger, scallions, and sliced garlic, 10g sesame oil.
Instructions:
1. Clean the cooked pork tripe, cut it into thin 4cm-long strips, blanch in boiling water, then remove and drain.
2. Clean and pick the cilantro, remove the leaves, and cut the stalks into 1-inch segments. Set aside.
3. Heat a wok over high heat. When the oil reaches 60% heat, quickly blanch the tripe strips, then remove and drain the excess oil.
4. Leave a little oil in the wok, heat to 70% heat, add the tripe strips, cilantro segments, and seasonings. Toss quickly and evenly in the wok.
5. Finally, thicken the sauce with a starch slurry, drizzle with sesame oil, then dish out and serve.
