1. When you buy the longans, they come in bunches, so you need to snip them into individual pieces. Be careful not to break the skin, and also pick out the best-looking longans.
2. Wash the longans. Place them in a colander and rinse them, preferably by running them directly under a faucet.
3. Boil the longans. Bring water to a boil, then add the longans and cook for 1-2 minutes. Then, remove them. This step helps with the drying process later.
4. Dry the longans. Place the longans in the sun to dry for 3-4 days. Make sure they are completely dry.
5. Finally, put the dried longans in a plastic bag and seal them for storage. That's it!
