Ingredients
Ingredients: Carrot; Spinach; Purple cabbage; Dumpling flour; Minced ginger
Scallions; Pork; Shrimp; Water chestnut; Winter bamboo shoot; Egg
Seasonings: Light soy sauce; Sesame oil; Salt; White pepper; Sugar
Method
1. Use pork with a mix of fat and lean. The shrimp should be freshly peeled from live grass shrimp, with river shrimp being even better. Use the tender tips of winter bamboo shoots. After washing and draining the pork and shrimp, chop them separately into a mince.
2. Also chop the water chestnut and winter bamboo shoot into a mince. Add all the ingredients along with the egg, cooking wine, light soy sauce, sesame oil, minced ginger, scallions, salt, white pepper, and sugar. Mix in one direction until the filling becomes firm and elastic. (If you're unsure about the saltiness, you can take a small piece, cook it in the microwave, and taste it.)
3. Chop the carrot, spinach, and purple cabbage, then add a little water to each and blend in a food processor. (Add as little water as possible, just enough for the processor to work, to avoid diluting the color.) After the juices are made, knead them separately with the dumpling flour into doughs and let them rest for about half an hour. The pink color was achieved by adding a little red yeast rice powder. (The ratio of liquid to flour is 1:2). Use a pasta machine to roll the doughs into smooth sheets.
4. Place the filling on a dumpling wrapper. Moisten the left, right, and bottom edges with water. Fold it into a rectangle and pinch the ends slightly to form cute candy dumplings.
