Three Cup Bamboo Shoots

Ingredients: 400g spring bamboo shoots, 5 shallots, 2 bird's eye chilies, 2 slices of ginger.

6. Pour in rice wine, bring to a boil over high heat, and cook until the sauce thickens.

Fresh Bamboo Shoot and Meat Dumplings

Ingredients: 200g ground pork, 40g spring bamboo shoots, 20g shrimp, appropriate amount of scallions and ginger, 50ml chicken stock, 1 stack of dumpling wrappers.

Method: 1. Peel the spring bamboo shoots, take the tender parts, slice them, and blanch in boiling water for a moment, then remove.

2. Wash the shrimp, devein and shell them, then dice; dice the bamboo shoots finely; mince the scallions and ginger.

3. Place the ground pork in a bowl. Add light soy sauce, salt, sugar, and cooking oil, and mix well. Add the chicken stock to the pork in batches, stirring in the same direction until the mixture becomes firm and elastic.

4. Mix half of the diced shrimp, bamboo shoots, and minced scallions and ginger into the pork filling and stir well.

5. Roll out the edges of the dumpling wrappers with a rolling pin to make them thinner, creating the shape for a *shaomai* wrapper.

6. Fill with the mixture, shape, and open the top to resemble a flower.

7. Place one shrimp on top of each *shaomai*.

8. Once the water in the steamer is boiling, place the *shaomai* in, steam over high heat for 8 minutes.

Spring Bamboo Shoot and Duck Soup in a Clay Pot

Ingredients: 1 spring bamboo shoot, 1 duck leg, 1/2 carrot, 1 small piece of ginger.

Method: 1. Cut the spring bamboo shoot and carrot into irregular chunks; slice the ginger and set aside.

2. Pour an appropriate amount of water into the clay pot, add the washed duck leg and ginger slices.

3. Bring to a boil over high heat, add cooking wine, then reduce to a simmer. Skim off any foam that rises to the surface during cooking.

4. After simmering for 40 minutes, add the carrot and spring bamboo shoots and continue to simmer over low heat.

5. Cover the pot and simmer slowly over low heat for another 40 minutes. Add a suitable amount of salt to taste.

Braised Fresh Pork Belly with Bamboo Shoots

Ingredients: 350g pork belly with skin, 150g spring bamboo shoots.

Method: 1. Cut the spring bamboo shoots into irregular chunks.

2. Add a suitable amount of salt to water, bring to a boil, add the bamboo shoots, and boil for another 5 minutes after it returns to a boil. Remove and soak in cold water for 10 minutes to remove oxalic acid and astringency. Drain and set aside.

3. Cut the pork belly into chunks; slice the scallions and ginger.

4. Heat oil in a wok, add the pork belly, and stir-fry slowly over low heat until both sides are golden brown and a lot of fat is rendered out.

5. Add the bamboo shoot chunks and stir-fry until their surfaces are golden. Pour out the excess oil from the wok.

6. Add yellow wine and dark soy sauce, stir-fry until evenly colored. Add the scallions and ginger and stir-fry until fragrant.

7. Add an appropriate amount of hot water, enough to cover the ingredients; add rock sugar and star anise. Bring to a boil over high heat, then reduce to low heat, cover, and simmer until the pork is tender. Add a little salt to taste.
