Experts say that nuts like pistachios have a low glycemic index and are rich in dietary fiber, healthy fats, and phytochemicals with antioxidant and anti-inflammatory properties, which is beneficial for blood sugar control. Since pistachios have a small impact on postprandial blood sugar, adding them to a carbohydrate-rich meal will effectively reduce postprandial blood sugar fluctuations.
