Instructions:
1. Cut the salmon into 0.5cm thick slices. Cut the mango into diamond-shaped pieces and set aside.
2. Wash the arugula, butter lettuce, and cherry radishes. Cut the arugula into 8cm sections, tear the butter lettuce into small pieces, and slice the cherry radishes thinly. Set aside.
3. Whisk together the Kuhne balsamic vinegar salad dressing, salt, wasabi, soy sauce for sushi, and sugar until well combined. Set aside.

Colorful Mango and Squid Stir-fry
Ingredients: 300g fresh squid, 1 mango, 50g snow peas, 50g green bell pepper, 50g red bell pepper.
Seasonings: 30g minced garlic and oyster sauce, 5g salt, 3g green onion, 5g ginger, 10g Shaoxing wine, 10g sugar, 5g vinegar, 10g sesame oil, 15g salad oil.
Instructions:
1. Cut the mango into 1.5cm diamond-shaped pieces and set aside.
2. Remove the squid bone, cut the squid in half lengthwise, and score it in a wheat pattern, then cut it into diamond-shaped pieces. Set aside.
3. Cut the green bell pepper, red bell pepper, and snow peas into diamond-shaped pieces. Mince the green onion and ginger. Set aside.
4. Heat a wok, add a little Shaoxing wine and salted water. When the water temperature reaches about 90°C, add the scored squid. Once the cuts open, remove and set aside.
5. Heat the wok again, add a little Shaoxing wine and salted water and bring to a boil. Add the snow peas, then the green and red bell peppers, and finally the mango. Blanch for about 30 seconds, then remove and set aside.
6. Heat the salad oil in the wok until it's about 30% hot. Add the minced green onion and ginger, and the oyster sauce until fragrant. Add Shaoxing wine, vinegar, sugar, and salt and bring to a boil. Add all the ingredients and stir-fry until well combined. Drizzle with sesame oil and serve on a plate.
