Bean sprouts are more nutritious than the original beans.

A sprout length of 3-5 cm is ideal.

Beans are rich in protein and contain almost no cholesterol, which is why they are known as "green cows." Eating more beans and their products has become a common nutritional fact. Therefore, many people, especially the elderly, enjoy dishes like dressed snow mustard and soybeans, and steamed soybeans. However, what people don't realize is that raw beans contain many anti-nutritional factors that are not well-known.

Take soybeans, for example. While they are high in protein, they contain trypsin inhibitors, which limits their nutritional value. In soybean sprouts, however, the protein is hydrolyzed into amino acids and peptides. Furthermore, oligosaccharides like stachyose in soybeans, which are indigestible by the human body and can cause bloating, are almost completely eliminated in sprouts, thus avoiding bloating after eating soybeans.

During the sprouting process, enzymes cause the release of mineral elements such as calcium, phosphorus, iron, and zinc, which significantly increases the human body's absorption of these minerals from the soybeans. After sprouting, the carotene content can increase 1-2 times, vitamin B2 can increase 2-4 times, vitamin B12 can be ten times that of soybeans, vitamin E can be three times higher, and substances like folic acid also increase multiple-fold.

Naturally grown bean sprouts have straight, white, and tender stalks with fine roots. Many people prefer to choose sprouts without roots, with short, thick stems, and small buds. This is actually a misconception. Rootless sprouts are cultivated with a chemical agent called a "herbicide." If pregnant women consume these sprouts over a long period, it can easily lead to fetal abnormalities. For children, long-term consumption can affect intellectual development. When selecting, also note that the sprout should be 3-5 cm in length.
