Many people know that eggs are nutritious and well-rounded, but they don't know that improper consumption can cause the nutrients to be lost in vain.
Ye Lin, Deputy Director of the Nutrition Department at Tangdu Hospital, Fourth Military Medical University, says that eggs should not be eaten alone. It is best to eat them with staple foods (carbohydrates) to improve the utilization rate of protein.
Some people only eat an egg and drink a glass of milk for breakfast. This way, the protein in the egg will be lost. If you can eat a little bread or steamed bun at the same time, the protein in the egg can be retained and absorbed by the body to the greatest extent.
Nowadays, people are more and more creative in how they eat eggs, but some of these methods are harmful to health: drinking raw eggs, adding raw eggs to beer, and beating eggs with boiling water. Director Ye said that these methods are all wrong because avidin in eggs is harmful to the human body, and these methods cannot destroy avidin.
Eggs are best eaten steamed or boiled. Steamed egg custard, poached eggs, and boiled eggs in their shells are all good ways to eat them. Scrambled eggs are also fine, but it is best not to eat fried eggs, because frying eggs until they are yellow or burnt will denature the protein.
Director Ye reminds: Steamed egg custard is suitable for young children. After one or two years old, they can eat boiled eggs. After the age of 3, they can eat scrambled eggs. The elderly should try to avoid eating scrambled or fried eggs. When making steamed egg custard or scrambled eggs, you can also add some leeks, dried shrimps, etc., to the beaten eggs according to personal taste to increase nutrient intake.
It should be noted that if you eat soft-boiled eggs, it is best to cook them for a shorter time, that is, cook for another five or six minutes after the water comes to a boil. At this time, the yolk of the egg is just set. Eating eggs in this state, the human body's absorption rate of protein is the highest.
