Lunchbox workers should be aware of the dangers of overnight food.

While frugality is a virtue, many are unaware that leftover food not only suffers from severe nutrient loss but can also produce substances harmful to the body. It should be noted that leftover vegetables and seafood should not be eaten, and meat must be reheated until it is thoroughly steamed and cooked to prevent spoilage and food poisoning from prolonged storage. Leafy green leftovers are not recommended.

It is said that the low incidence of gastric cancer is related to the habit of not eating leftover vegetables. This is because some leafy green vegetables contain a high amount of nitrates. If left for too long after cooking, bacteria will break down these nitrates into nitrites, which are carcinogenic and cannot be removed by reheating.

Healthy Eating Method: Generally, leafy stem and vegetable varieties have the highest nitrate content, followed by root and stem vegetables and cauliflower-like types, with gourds having the lowest. Therefore, if you buy different kinds of vegetables, you should eat the leafy stem varieties, such as Chinese cabbage and spinach, first. If you plan to cook extra food to reheat the next day, try to make less of the leafy stem vegetables and choose gourds instead.

Proper Storage for Leftover Soup

Many people enjoy making soups. What about the leftover soup that is put in the fridge and reheated the next day? Is it healthy?

Healthy Eating Method: The best way to store soup is to not add salt or other seasonings to the base. After cooking, use a clean ladle to serve the portion for the day. For the rest, it is best to store it in a clay pot in the refrigerator. Leaving leftover soup in an aluminum or stainless steel pot for a long time can cause chemical reactions, so it should be stored in glass or ceramic containers.

Be Selective with Packed Lunches

Many people get tired of restaurant lunches and don't want to eat out every day, so they choose to bring their own. However, most packed lunches are from the previous night's dinner. After being stored all night and through the morning, the nutritional content of the food is significantly depleted. Therefore, choices should be made when packing lunch.

Healthy Eating Method: Foods suitable for packing include rice, beef, bean products, various non-leafy vegetables, fruits, and yogurt. Lunch should provide sufficient energy, and foods rich in protein, vitamins, and minerals are essential. Among vegetables, loofah and lotus root are high in fiber. You can also choose celery, mushrooms, and radishes. When cooking vegetables for the next day, stir-fry them until they are about 60-70% cooked to prevent further nutrient degradation when reheated in the microwave the next day. Try to choose lean meats for the main courses, such as beef and chicken. After cooking, let the food cool, then cover it immediately and store it in a 4°C refrigerator. When you get to the office, put it in the fridge right away. At lunchtime, heat it thoroughly in the microwave before eating.

Foods that should not be eaten as leftovers include fish, seafood, leafy green vegetables, and cold salads. Fish and seafood can produce protein degradation products overnight, which can damage liver and kidney function. Leafy green vegetables contain varying amounts of nitrates. If overcooked or stored for too long, the vegetables will turn yellow and spoil, and the nitrates will be converted by bacteria into toxic nitrites, which are carcinogenic. Cold salads are more prone to contamination during preparation and are likely to spoil even after refrigeration, so they should be eaten fresh.
