When dining out, leftover food is inevitable. So, are all leftovers suitable for taking home? How should these leftovers be handled?

1. Packaged food should be completely cooled before being placed in the refrigerator. When hot food suddenly enters a low-temperature environment, the center of the food is prone to spoilage. Moreover, the heat from the food will cause water vapor to condense, promoting mold growth and leading to spoilage of the entire dish.

2. Leftovers must be reheated until boiling before consumption. The temperature of a refrigerator can only inhibit bacterial reproduction; it cannot kill them completely. Eating food that is not thoroughly boiled can cause dysentery or diarrhea.

3. The storage time for leftovers should not be too long. Leftovers should ideally be consumed within the same meal—e.g., leftovers from breakfast should be eaten at lunch, and leftovers from lunch at dinner. It is best to finish them within 5-6 hours. Under normal circumstances, general bacteria, viruses, and parasites can be killed by heating to 100°C. However, if stored for too long, bacteria in the food will release chemical toxins that cannot be removed by reheating.

4. Vegetarian dishes are not suitable for taking home. Because vegetarian dishes are generally prepared with less salt, bacteria can multiply rapidly over time. Nitrates in the food are reduced to nitrites by bacteria, and nitrites can easily combine with amines in nature to form carcinogenic nitrosamines.

What to pay attention to when reheating leftovers

Fish: Reheat for 4-5 minutes. Dishes made with fish allow bacteria to multiply easily. The E. coli on fish can double in number every minute at a temperature of around 20°C. Within 5-6 hours, one bacterium can become a hundred million, which is enough to cause an upset stomach. Therefore, leftover fish must be reheated for 4-5 minutes. Overheating for too long will cause the nutrients in the fish to be lost.

Meat: Add a little vinegar when reheating. These types of foods contain relatively rich minerals. When heated, these minerals are released along with the moisture. Therefore, adding a little vinegar during reheating causes these substances to combine with acetic acid to form calcium acetate, which improves their nutritional value and aids absorption.

Seafood: Add seasonings when reheating. For shellfish and seafood, it is best to add extra seasonings like wine, scallions, and ginger when reheating. This not only enhances the flavor but also has a certain antibacterial effect.

Starchy foods: Please finish within 4 hours. Foods rich in starch are easily inhabited by Staphylococcus, and the toxins produced by this type of bacteria are not broken down by high-temperature heating.
