Are vegetables worse the fresher they are?

Is it always best to eat the freshest food? American scientists have recently discovered: fresh does not necessarily mean more nutritious or healthier. For most vegetables, the nutritional value after being properly stored for a week is almost the same as, or even identical to, when they were first picked. However, some foods are "the fresher, the more dangerous."

Wood Ear Mushroom: Fresh wood ear mushrooms contain toxic photosensitive substances. After consumption, they can cause solar dermatitis and are easily absorbed by the pharyngeal mucosa, leading to edema.

Freshly picked fruit: Any fruit in an orchard is inevitably sprayed with pesticides and can suffer from pests and diseases. Eating them right after picking is very dangerous.

Tea: Certain substances in new tea have not been fully oxidized. Drinking new tea can easily lead to reactions such as diarrhea, bloating, and indigestion. In severe cases, it can also irritate the gastric mucosa and cause stomach diseases.

Cabbage: Cabbage that has been refrigerated for a few days has a higher vitamin C content compared to fresh cabbage.
