Plating Techniques for Western Cuisine

Western Table Setting

Basic Principles: Fork on the left, knife on the right; from the inside out; knife blade facing the plate; all utensils aligned in a straight line; utensils matching the dishes.

Tabletop Items: Place a vase in the center of the table. In front of the vase, place the salt and shaker, with salt on the left and pepper on the right. In front of the salt and pepper, place the toothpick holder. In front of the toothpick holder, place the ashtray, with the缺口 of the ashtray aligned with the centerline between the salt and pepper. The table mat should be placed in the exact center of the table.

Before setting the table, inspect all tableware and glassware to be used. Replace any items that are dirty or broken. Ensure that all items used are clean, bright, and in good condition. When placing items, do not touch the surface of the plates or the rims of the glasses.

When setting the table, use a tray to carry all tableware, glassware, and utensils. When handling gold or silver utensils, wear gloves to ensure they remain clean and prevent contamination.

Order and Standards for Setting Tableware and Glassware:

1. Setting the Display Plate

The display plate can be carried on a tray or held with a cloth napkin in the left hand. The napkin is placed under the plate to lift it. Starting from the host's position, place the plate directly in front of each guest in a clockwise direction using the right hand. The restaurant's logo on the plate should be upright. The edge of the plate should be 1.5 cm from the edge of the table, and the distance between plates should be equal.

2. Setting the Bread Plate and Butter Dish

Place the bread plate 10 cm to the left of the display plate. The center of the bread plate should align with the center axis of the display plate. The butter dish is placed in the front right of the bread plate, 1.5 cm away, with the design facing correctly.

3. Setting Knives, Forks, and Spoons

Place knives, forks, and spoons in order from the right side of the display plate. Hold them by the handles, starting with the main knife.

(1) The main knife is placed to the right of the display plate, perpendicular to the table edge. The handle is 1 cm from the table edge, with the blade facing left and 1 cm from the display plate.

(2) The fish knife, appetizer knife, soup spoon, and other utensils are spaced 0.5 cm apart. Handles are 1 cm from the table edge, blades face left, and spoons face up.

(3) The main fork is placed to the left of the display plate, 1 cm away from it, with the handle 1 cm from the table edge.

(4) When placing the fish fork, the handle is 5 cm from the table edge, with the tines pointing up. The appetizer fork's tines face up, and its handle is parallel to the main fork's handle. The dessert fork is placed directly in front of the display plate, with the tines pointing left and 1 cm from the plate.

(5) The dessert spoon is placed directly in front of the dessert fork, parallel to it, with the head pointing right and 0.5 cm from the fork's handle.

(6) The butter knife is placed diagonally on the bread plate, with the blade facing left. The center of the butter knife aligns with the centerline of the bread plate. The handle points to the lower right, forming a 45-degree angle with the bread plate's horizontal line.

(7) When placing the fruit knife and fork directly in front of the display plate, place the fork on top of the knife in a diagonal cross. The blade faces the lower left, the handle points to the lower right, the fork tines point to the upper right, and the fork handle points to the lower left. Alternatively, the dessert spoon can be placed on top of the fruit knife and fork, with the bowl facing up and the handle pointing right.

4. Setting Glassware

When setting glassware, hold them by the foot or base.

(1) The water glass is placed above the main knife. The center of its base aligns with the centerline of the main knife, and the base is 2 cm from the tip of the knife.

(2) The red wine glass is placed to the lower right of the water glass. The line connecting the centers of their bases forms a 45-degree angle with the table edge, and the distance between the bowls is 0.5 cm.

(3) The white wine glass is placed to the lower right of the red wine glass, following the same standards.

5. Setting the Napkin

Place a folded napkin in the display plate. The napkin fold should be appropriate, and the decorative side should face the guest.

6. Setting Candlesticks and Salt and Pepper Shakers

A Western banquet typically features two candlesticks, placed on the tablecloth's centerline at appropriate positions on either side of the table. The salt and pepper shakers are placed symmetrically on the tablecloth's centerline, with salt on the right and pepper on the left. The distance between the shakers is 0.5 cm, and the base of the shakers is 2 cm from the base of the candlesticks.

7. Setting Ashtrays and Matches

The ashtray should be placed directly in front of the host and co-host, with its center aligned with the vertical line of their display plates, 2 cm from the salt and pepper shakers. Matches are placed flat on top of the ashtray, with the design facing up. Starting from the right of the host, place an ashtray every other seat.

8. Key Principles of Western Table Setting

Pay attention to the order of setting Western tableware: first set the display plate for positioning, then place various knives, forks, and spoons, followed by the bread plate, and finally the various wine glasses. After the tableware is set, place a folded napkin in the display plate. In the center of the table, place a vase, salt and pepper shakers, a sugar bowl, candlesticks, etc. When setting the table, hold the edges of porcelain and the handles of knives, forks, and spoons. Place knives and spoons on the guest's right and forks on the left. Silverware should be handled with a cloth napkin or gloves. Replace any broken or dirty utensils promptly. Table setting customs for Western tableware vary by region and country (e.g., French, American, Russian styles), but the basic principles are: plate in the center, spoon horizontally in front of the plate, fork on the left and knife on the right, from the outside in, fork tines pointing up, knife blade facing the plate, main dishes to the left, utensils to the right.

9. How to Arrange Seating for the Host and Guest of Honor at a Western Banquet?

The seating arrangement for the host and guest of honor is generally similar for various table shapes. The host's seat is typically placed in the center of the head of the table. The seat for the guest of honor is arranged to the host's right, and the seat for the secondary guest of honor is to the host's left. Other guests are then seated from top to bottom and from right to left.

10. What Types of Table Shapes are Used for Western Banquets?

They can be divided into various shapes such as straight-line, T-shaped, U-shaped, and 山-shaped (mountain-shaped), generally designed and arranged based on the number of attendees.
