Incorrect Way One: Smoking and Roasting
The temperature of smoking and roasting often fails to meet the requirements for killing bacteria in seafood. Moreover, it only kills surface bacteria, while parasite eggs may still exist in the center.
Incorrect Way Two: Pickling
Pickling or marinating seafood with糟卤 (zāo lǔ), soy sauce, or rice liquor does not have the function of killing bacteria in seafood. Even after pickling for 24 hours, some parasite eggs may still survive. This method of preparing seafood is almost equivalent to eating it raw, which is detrimental to health.
Incorrect Way Three: Eating Raw
Raw seafood often contains bacteria and toxins. Eating it raw can easily lead to food poisoning. Furthermore, sea fish contains a relatively high amount of histidine, and eating it fresh can easily cause allergies.
Incorrect Way Four: Quick Boiling
In order to keep the ingredients tender, the boiling time in hot pot is extremely short. In the semi-cooked seafood, parasite eggs cannot be killed, and the risk of infection after consumption is high.
