Forming stones. Tofu has a high calcium content. If it is often eaten with vegetables high in oxalic acid, it will form calcium oxalate, which is not easily absorbed, and may form stones. Solution: If you want to pair tofu with vegetables high in oxalic acid, such as spinach, water spinach, red amaranth, or water bamboo, you must blanch the vegetables first to reduce their oxalic acid content.
