Dr. Marilyn Nanney of Saint Louis University has selected her "High-Power" series based on the vitamin, dietary fiber, and beta-carotene content in various vegetables and fruits. Dr. Nanney categorized them by color: White:

Cauliflower is the top choice, followed by potatoes, onions, and mushrooms. Green:

Spinach, broccoli, and Brussels sprouts are the top choices.
