How to Make Choy Sum Stir-Fried Rice Noodles

200g rice noodles ( dried or fresh ), 150g choy sum (cut into 3-inch pieces), 100g cooked shrimp (shelled), 50g shredded carrots, 2 cloves garlic (minced), 2 tbsp cooking oil, 2 tbsp light soy sauce, 1 tsp oyster sauce, 1/2 tsp sugar, and a pinch of white pepper.

Steps:

1. Prep the noodles: Soak dried rice noodles in warm water for 10 minutes until soft, then drain. Fresh noodles can be used directly.
