How to Cook Braised Jumbo Shrimp: A Simple Guide

Braised jumbo shrimp, or "You Men Ji Wei Xia" in Chinese, is a beloved dish known for its savory, slightly sweet sauce and tender, juicy shrimp. Here’s a step-by-step guide to making it at home.

Ingredients:

- 500g fresh jumbo shrimp, peeled and deveined (tails left on for presentation)

- 3 tbsp vegetable oil

- 4 cloves garlic, minced

- 1 tbsp ginger, grated

- 2 green onions, chopped

- 2 tbsp soy sauce

- 1 tbsp oyster sauce

- 1 tsp sugar

- 1/2 cup water or stock

- 1 tsp sesame oil

- A pinch of white pepper

Instructions:

1. Prep the shrimp: Rinse and pat dry the shrimp. Marinate them with 1 tsp soy sauce and a pinch of white pepper for 10 minutes.

2. Sauté aromatics: Heat oil in a wok over medium-high heat. Add garlic and ginger, stir-fry until fragrant (30 seconds).

3. Cook the shrimp: Add the shrimp and stir-fry until they turn pink and opaque (2-3 minutes). Do not overcook to keep them tender.

4. Simmer the sauce: Pour in soy sauce, oyster sauce, sugar, and water. Stir well and bring to a gentle simmer. Cook for 2-3 minutes until the sauce thickens slightly.

5. Finish and serve: Drizzle in sesame oil, sprinkle green onions, and stir once. Transfer to a plate and serve hot with steamed rice.

Tips: For extra flavor, add a splash of rice wine or a dried chili. Adjust seasoning to taste—some prefer a sweeter or saltier profile. Enjoy this restaurant-quality dish in under 20 minutes!
