Shaqima, a beloved crispy snack, gets a vibrant twist with purple sweet potato, adding natural sweetness and a stunning hue. Here’s a simple recipe to recreate this treat at home.
Ingredients:
- 200g purple sweet potato, steamed and mashed
- 300g all-purpose flour
- 2 eggs
- 150g sugar (adjust to taste)
- 100g water or milk
- Oil for frying
- Sesame seeds (optional, for topping)
Steps:
1. Prepare the Dough: Whisk eggs and sugar until fluffy. Gradually add mashed purple sweet potato, mix well. Sift in flour and knead into a smooth dough (add water/milk if too dry). Let rest for 30 minutes.
2. Shape the Shaqima: Roll the dough into a 1cm-thick sheet. Cut into long strips, roughly 5cm × 1cm. Gently stretch each strip and twist slightly for a traditional shape.
3. Fry: Heat oil to 160°C. Fry twisted strips in batches until golden and puffy (about 2-3 minutes). Remove and drain on paper towels.
4. Coat: While warm, toss the fried strips in a mixture of sugar and a pinch of purple sweet potato powder for extra color and flavor. Sprinkle with sesame seeds if desired.
Tips: For a softer texture, add a tablespoon of honey to the dough. Store in an airtight container to maintain crispness. Enjoy this colorful, delicious snack with tea or as a sweet treat!
