How to Make Pork and Dumpling Pancakes: A Step-by-Step Guide

Pork and celery dumpling pancakes (Jiaozi) are a beloved Chinese dish with crispy bottoms and savory fillings. Here’s a simple recipe to make them at home.

Ingredients: For the filling, mix 300g ground pork, 2 cups finely chopped celery, 2 minced garlic cloves, 1 tbsp soy sauce, 1 tsp sesame oil, 1/2 tsp salt, and a pinch of white pepper. For the wrapper, you can use store-bought dumpling wrappers or make dough from 2 cups all-purpose flour and 3/4 cup warm water.

Steps:

1. Prepare the filling: Combine all filling ingredients in a bowl, mix well, and let it rest for 15 minutes to allow flavors to meld.

2. Assemble the dumplings: Place a tablespoon of filling in the center of each wrapper. Fold the wrapper in half, pinch the edges to seal, and create small pleats for a traditional look.

3. Cook the dumplings: Heat 2 tbsp oil in a non-stick pan over medium heat. Arrange the dumplings in the pan, flat side down. Fry for 2-3 minutes until the bottoms turn golden.
