How to Make Sweet and Sour Crispy Lotus Root Fries

Sweet and sour crispy lotus root fries are a beloved appetizer or side dish, known for their crunchy texture and tangy-sweet flavor. Here’s a simple yet delicious recipe to recreate them at home.

Ingredients:

- 1 fresh lotus root (about 300g), peeled and cut into matchsticks

- 2 tbsp cornstarch

- Oil for frying

- For the sauce: 3 tbsp sugar, 2 tbsp vinegar, 1 tbsp soy sauce, 1 tsp ketchup, and a pinch of salt.

Steps:

1. Prepare the Lotus Root: Rinse the lotus root sticks, pat dry, and toss with cornstarch until evenly coated. This ensures a crispy exterior when fried.

2. Deep-Fry: Heat oil in a wok or deep pan to 180°C (350°F). Fry the lotus root sticks in batches for 3-4 minutes until golden and crispy. Remove and drain excess oil.

3. Make the Sauce: In a small bowl, mix sugar, vinegar, soy sauce, ketchup, and salt. Pour into a pan, bring to a simmer, and stir until the sugar dissolves and the sauce thickens slightly.
