How to Make Fried New Year Cake: A Simple Guide

Fried New Year Cake, or "Nian Gao," is a crispy, chewy treat enjoyed during Lunar New Year. Here’s an easy guide to making it at home.

Ingredients:

- 2 cups glutinous rice flour

- ½ cup warm water

- 1 tablespoon sugar (optional)

- Oil for frying

- Optional toppings: Sesame seeds, red bean paste, or osmanthus syrup.

Steps:

1. Prepare the batter: Mix glutinous rice flour and sugar in a bowl. Gradually add warm water, stirring until a smooth, thick dough forms. Knead for 5 minutes until elastic.

2. Shape the cakes: Divide dough into small balls (about 1 inch in diameter). Flatten each into a ½-inch-thick cake. For a sweet version, wrap a teaspoon of red bean paste in the center before flattening.

3. Cook the cakes: Bring water to a boil in a steamer. Place cakes on parchment paper and steam for 15–20 minutes until translucent. Let them cool slightly.

4. Fry until golden: Heat oil in a wok over medium heat. Carefully add steamed cakes (work in batches to avoid crowding). Fry for 2–3 minutes per side until golden and crispy. Drain on paper towels.

5. Serve: Sprinkle with sesame seeds or drizzle with osmanthus syrup while warm. Enjoy crispy on the outside, chewy on the inside!

This versatile snack can be savory (add scallions or five-spice powder) or sweet. Perfect for celebrating or as a cozy treat!
