Spicy sautéed cabbage (炝拌包菜) is a quick, flavorful Chinese stir-fry loved for its crunch and aromatic kick. Here’s a step-by-step guide to mastering this dish at home.

Ingredients:

- 1/2 medium cabbage (about 400g), cored and shredded

- 2-3 dried red chilies (adjust to taste)

- 3 cloves garlic, minced

- 1 tbsp cooking oil

- 1 tsp light soy sauce

- 1/2 tsp dark soy sauce (for color)

- 1/2 tsp sugar

- 1/2 tbsp vinegar (rice vinegar preferred)

- Salt to taste

Instructions:

1. Prep the cabbage: Rinse the shredded cabbage and drain well. Pat dry to avoid excess water, which can make the dish soggy.

2. Heat the oil: In a wok or large skillet, heat oil over medium-high. Add dried chilies and minced garlic, stir-frying for 10-15 seconds until fragrant (do not burn the garlic).

3. Stir-fry the cabbage: Add the cabbage to the wok, tossing quickly. Pour in light soy sauce, dark soy sauce, sugar, and vinegar. Stir-fry for 2-3 minutes until the cabbage wilts slightly but remains crisp.
