How to Make Aiwoaiwo: A Step-by-Step Guide

Aiwoaiwo, a beloved traditional Chinese snack from Beijing, is a soft, sweet rice cake filled with red bean paste and dusted with rice flour. Making it at home is simple and rewarding. Here’s a detailed guide.

Ingredients: For the dough, you’ll need 200g glutinous rice flour, 150ml warm water, and 1 tbsp sugar. For the filling, use 150g red bean paste (store-bought or homemade). Extra rice flour is for dusting.

Steps:

1. Prepare the dough: Mix glutinous rice flour and sugar in a bowl. Gradually add warm water, stirring until a soft dough forms. Knead for 5 minutes, then let it rest for 15 minutes.

2. Make the filling: If using homemade red bean paste, cook beans until soft, mash, and simmer with sugar until thick. Let it cool completely.

3. Shape the Aiwoaiwo: Divide the dough into 8 equal balls. Flatten each into a small circle, place a spoonful of red bean paste in the center, and seal the edges. Roll into smooth balls.

4. Cook: Bring water to a boil in a steamer. Place the dough balls on a parchment-lined tray, leaving space between them. Steam for 15-20 minutes until translucent.
