Enoki mushrooms are relatively high in zinc and are known to promote intellectual development and brain health in children. In many countries, including Japan, they are hailed as "smart mushrooms" or "intelligence-boosting mushrooms." Today, I'll teach you a nutritious and delicious home recipe: Stir-fried Enoki Mushrooms with Pork.
Main Ingredients: 260g Enoki mushrooms, 120g Pork

Steps:
1. Prepare the ingredients.
2. Cut the pork into thin shreds.
3. Add cooking wine, a little starch, and egg white. Mix well and marinate for about 10 minutes, then set aside.
4. Remove the root ends of the enoki mushrooms.
5. Wash with water and squeeze out the excess moisture.
6. Tear apart and set aside.
7. Add a little oil to the pan and stir-fry the enoki mushrooms.
8. Stir-fry until they become soft, then turn off the heat, remove from the pan, and set aside.
9. Add a little oil to the pan (if you used a lot of oil for the mushrooms, you may not need more) and sauté the scallions and ginger until fragrant.
10. Add the pork shreds and stir-fry quickly.
11. When the pork turns white, add cooking wine.
12. After stir-frying again, add an appropriate amount of soy sauce.
13. Stir-fry quickly again.
14. Add the stir-fried enoki mushrooms.
15. Add an appropriate amount of salt.
16. After stir-frying again, add a little chopped cilantro and chili peppers for garnish.
Tips:
1. Enoki mushrooms must be cooked thoroughly; do not eat them raw.
2. For easier slicing, freeze the pork for a little while after purchasing it.
