Avocados have been all the rage these past couple of years, with recipes that are incredibly sophisticated. Today, I'm sharing some incredibly delicious avocado recipes that will make you cry. Come and discover the lesser-known charms of avocado. One bite and you'll be hooked!
▌Avocado Sashimi
Ingredients: 1 avocado, Japanese soy sauce to taste, a little toasted white sesame seeds, a small piece of wasabi
1. Hold the avocado in one hand and use a knife to score a circle around the pit. Then, twist the avocado to open it into two halves. Next, insert a sharp knife into the pit, twist gently, and pull it out.
2. Turn the avocado halves over and cut off a small piece from the top near the stem. Then, slice the avocado. I prefer thick slices, which gives a texture similar to thick-cut salmon. Peel off the skin.
3. Arrange the slices on a plate and sprinkle with sesame seeds.
4. Drizzle with Japanese soy sauce mixed with wasabi. (Alternatively, you can serve the wasabi and soy sauce separately in small dishes.)
▌Avocado and Orange Salad
Ingredients: 1/2 avocado, 2 oranges, 1/2 lemon, 1/8 tsp sea salt, 1/2 tbsp olive oil, 1/2 tbsp honey, a small amount of salad greens
1. Wash one orange with salt water, then grate some zest (avoid the white pith). Peel the orange, remove the flesh, and slice it.
2. Wash the other orange, cut it in half, and squeeze the juice by hand. Squeeze the juice from half a lemon as well.
3. Mix the orange and lemon juice, then strain it. Add honey, sea salt, olive oil, and orange zest, and mix well.
4. Peel and pit the avocado, slice it, and arrange it on a plate with the orange slices.
5. Garnish with a small amount of washed and drained salad greens.
6. Drizzle with the prepared fruity salad dressing and enjoy.
▌Tropical Avocado Smoothie
Ingredients: 1 cup fresh orange juice, 50ml pineapple juice (optional, or use 1/4 cup fresh pineapple chunks), 1/4 cup ripe avocado flesh, 1/2 cup mango flesh
1. Put all the fruits into a blender. *If you don't like it too thick, you can add more orange juice. The avocado will make the smoothie's texture very creamy.
2. Blend until completely smooth and serve.
▌Avocado Chocolate Mousse
Ingredients: 1 ripe avocado, 2 ripe medium bananas, 1.5-2 tbsp cocoa powder, a pinch of sea salt (optional), 1 tsp vanilla extract, 50ml coconut milk (optional)
1. Cut the avocado and banana into small pieces. Place them in a food processor with all the other ingredients except toppings. Blend until smooth. Taste and add more honey if it's not sweet enough. For a richer chocolate flavor, add more cocoa powder.
2. Pour the blended chocolate mousse into small glasses and refrigerate until set. If you don't want to wait, you can eat it right away. Finally, add the toppings. This recipe makes two servings as shown in the picture.
*Using coconut milk can make the texture richer and creamier, but it will also be higher in calories. Add it according to your preference.
*Make sure to use a ripe avocado so it becomes smooth and creamy after blending.
▌Shrimp, Avocado, and Cucumber Bites
Ingredients: 1 ripe avocado, 1 cucumber, 10 shrimp, 2-3 tbsp mayonnaise, a little mustard sauce, salt, black pepper, green onions to taste, sesame seeds to taste, potato chips or tortilla chips
1. Wash and dry the cucumber, then dice it on a cutting board and place it in a large bowl.
2. Cut a lemon in half and use the cut side to rub the blade of your knife. The lemon juice will prevent the exposed avocado from oxidizing and turning brown.
3. Cut the avocado in half, remove the pit, and dice it. Add it to the bowl with the cucumber.
4. Squeeze two or three squeezes of fresh lemon juice over the cucumber and avocado, toss to mix and prevent oxidation. This will also make the final dish taste fresher.
5. Peel and devein the shrimp. Sprinkle with a pinch of salt and rub, then pan-fry in a hot pan with a little oil until cooked. Set aside.
6. Mix the mayonnaise with Japanese mustard. Add the mustard gradually to your taste, as too much can be overpowering and mask the other flavors.
7. Pour the prepared sauce over the ingredients and toss to combine. Taste and add more salt if needed.
8. To assemble, place a scoop of the mixture from step 7 on a potato chip or tortilla chip. Top with one shrimp, and sprinkle with sesame seeds, chopped green onions, and black pepper. Enjoy!
