Lao Gan Ma Spicy Spare Ribs
Ingredients: 1 jin of pork spare ribs, Lao Gan Ma Spicy Sauce, 2 tablespoons of garlic cloves, 1 piece of old ginger, a small handful of roasted peanuts, 2 tablespoons of cooking wine, salt to taste
Instructions:
1) Wash the spare ribs, cut into pieces, and blanch in boiling water. Remove and drain.
2) Finely chop the ginger and garlic.
3) Heat oil in a wok to medium heat (about 50% hot), add ginger and garlic and stir-fry until fragrant.
4) Add Lao Gan Ma Spicy Sauce and stir-fry briefly.
5) Add the spare ribs and cooking wine, stir-fry for about 2 minutes.
6) Add 1 to 2 jin of water (depending on your preferred tenderness of the ribs), cover, bring to a boil over high heat, then reduce to low heat.
7) When the sauce is almost reduced, add salt. Turn up the heat to high and reduce the sauce until it thickens and the oil glistens. Remove from the wok and serve.
Lao Gan Ma Sauce-Spare Ribs
Homemade Lao Gan Ma Black Bean Sauce
Ingredients: 50g of black beans, appropriate amount of dried chili peppers, appropriate amount of Sichuan peppercorns, appropriate amount of chili flakes, appropriate amount of peanuts, appropriate amount of sesame seeds, appropriate amount of soybean powder, appropriate amount of scallions, appropriate amount of ginger, appropriate amount of star anise, appropriate amount of sugar, appropriate amount of salt, appropriate amount of soy sauce, appropriate amount of cooking oil, appropriate amount of starch water, appropriate amount of water
Instructions:
1) Mix the black beans with a small amount of cooking oil, then steam for 20 minutes.
2) Mash the steamed black beans with a spoon, to your desired texture.
3) In a wok over low heat, fry the dried chili peppers and Sichuan peppercorns until fragrant.
4) Let them cool, then grind into a powder.
5) Mix roasted peanuts, roasted soybean powder, and roasted sesame seeds, set aside. These are for extra aroma, you can choose to add them or not.
6) In a wok, add scallions, ginger slices, and star anise and fry until fragrant. Remove the solids. (You can add other spices to fry together).
7) Using the oil from frying the scallions and ginger, stir-fry the black beans over low heat until fragrant.
8) Add the ground dried chili peppers and Sichuan peppercorns, and stir-fry until fragrant.
9) Add the mixture of peanuts, soybean powder, and sesame seeds, and stir-fry until fragrant.
10) Add chili flakes, stir-fry, then add an appropriate amount of sugar, salt, and a little soy sauce.
11) Add an appropriate amount of boiling water and bring to a boil.
12) Add starch water to thicken, then remove from heat.
Homemade Lao Gan Ma Black Bean Sauce
Steamed Eggplant with Lao Gan Ma
Ingredients: 300g of eggplant, 30g of Lao Gan Ma, 30ml of vinegar, 15ml of light soy sauce, 10ml of oyster sauce, 10g of sugar, appropriate amount of minced garlic, appropriate amount of minced cilantro
Instructions:
1) Cut the eggplant into small pieces and arrange them on a plate.

Ingredients: 1 bowl of cold rice, 1 egg, 2 teaspoons of Lao Gan Ma Beef & Black Bean Sauce, appropriate amount of olive oil, appropriate amount of Chinese Five Spice powder, appropriate amount of cooked corn kernels
Instructions:
1) Prepare the ingredients.
2) In a bowl with cold rice, add the egg and Chinese Five Spice powder.
3) Whisk and mix well.
4) In a wok, add olive oil and stir-fry Lao Gan Ma over low heat until fragrant.
5) Pour in the mixed egg rice and stir-fry.
