Instructions:
1. Prepare all ingredients. The tomatoes should not be too large; about 150 grams each is suitable. Wash the mushrooms, chop them finely, peel and mince the garlic. Wash the tomatoes, remove the bottom, and cut off the top.
2. Heat a small amount of vegetable oil in a pan. Add the minced garlic and stir-fry until fragrant. Add the chopped mushrooms and stir-fry until soft. Add a suitable amount of salt and black pepper, stir well, and turn off the heat.
3. Arrange the tomatoes on a baking sheet. Brush a thin layer of oil around the tomatoes. Sprinkle a little salt and black pepper on the cut surface. Use a spoon to scoop the stir-fried mushroom mixture onto the tomatoes and add a suitable amount of mozzarella cheese.
4. Place the baking sheet in a preheated oven at 185°C. Preheat the oven with both top and bottom heating elements at 185°C. Place the baking sheet on the second rack from the bottom, with the convex side up. Bake for 12 minutes. When the time is up, remove the baking sheet, plate the tomatoes, and sprinkle with a little dried onion.

Stir-fried Tomatoes with Tofu
Main ingredients: Tomatoes, tofu, pork
Seasonings: Five-spice powder, scallion, ginger
Instructions:
1. Cut the tofu into small cubes, dice the pork, and wash and dice the tomatoes.
2. Heat oil in a wok, add scallions and ginger to stir-fry until fragrant. Add the diced pork and stir-fry until the pork changes color.
3. Add the tofu cubes, along with the tomatoes, minced scallions and ginger, salt, and five-spice powder. Stir-fry until the surface of the tofu starts to turn golden and the tomatoes release their juices, then simmer for another 3 minutes before turning off the heat and serving on a plate.

Homestyle Tofu in Tomato Sauce
Main ingredients: Tofu, tomatoes
Seasonings: Fish balls, broth, chopped scallion
Instructions:
1. Rinse the tofu and cut it into small cubes. Wash the tomatoes and cut them into wedges. Halve the fish balls and set aside.
2. Heat oil in a pan, add the tofu cubes, and pan-fry until both sides are slightly yellow. Remove and set aside.
3. In the remaining oil in the pan, add the tomatoes and stir-fry. Use a spatula to press the tomatoes to release their juice.
4. Add the pan-fried tofu. Stir-fry the tofu with the tomato sauce until well combined, then add the fish balls. Add an appropriate amount of broth and simmer for 5 minutes.
5. Add light soy sauce, let the sauce reduce slightly, adjust the seasoning, and serve in a bowl. Garnish with chopped scallions.

Tomato-Braised Beef Brisket
Main ingredients: Beef brisket, tomatoes
Seasonings: Potato, onion, star anise, cinnamon
Instructions:
1. Cut the beef brisket into small pieces. Blanch it in boiling water, then rinse it clean with hot water.
2. Dice the tomatoes, potatoes, and onion. Prepare scallions, ginger, star anise, and cinnamon.
3. Additionally, prepare another portion of tomatoes and potatoes cut into large chunks.
4. Heat oil in a pot, add the onion and stir-fry until fragrant. Add the diced tomatoes and potatoes.
5. Once the tomatoes are cooked and mashed, add the beef brisket. Stir-fry with tomato paste until well combined, then add hot water.
6. Transfer to a soup pot, bring to a boil, then reduce to low heat. Add the large scallion, ginger, star anise, and cinnamon. Simmer slowly for about 60 minutes. Add the remaining tomatoes and potato chunks. Finally, season with salt and serve.
