Main Ingredients
6 eggs, 90g cake flour, 80ml milk, 60ml corn oil, 80g fine sugar, a few drops of lemon juice
Steps
1. Prepare all ingredients. It's best to sift the cake flour in advance for later steps.
2. Separate the eggs: use 5 egg whites and 5 egg yolks + 1 whole egg. Place the separated egg whites in the refrigerator to chill.
3. Pour corn oil into a small pot, heat until boiling, then turn off the heat (when it's very hot and starting to smoke).
4. Sift the flour into the hot oil to scald it, stirring constantly while pouring to prevent clumping. Quickly stir until it becomes a smooth, fine paste.
5. Whisk the 5 egg yolks and 1 whole egg together.
6. Add the milk to the egg mixture in portions, mixing well after each addition.
7. Let the scalded flour mixture cool completely before adding it to the egg-milk mixture. If it's too hot, it will cook the eggs.
8. Stir until you get a smooth yolk batter.
9. Add a few drops of lemon juice to the 5 egg whites. Add the sugar in three portions and beat the egg whites until stiff peaks form.
10. Beat until stiff peaks are achieved.
11. Add the yolk batter to the beaten egg whites in three portions, folding gently to combine.
12. The final cake batter should be well mixed and smooth.
13. Pour the batter into a mold and tap it gently to release any air bubbles.
14. Preheat the oven. Bake using the water bath method on the middle rack. I placed a pan of water on the rack below the mold with the cake pan on top. For solid-bottom pans, you can place them directly on the baking sheet. My oven runs hot on top, so I baked at 150°C (top heat) and 160°C (bottom heat) for one hour. The specific temperature and time will depend on your own oven.
15. Once baked, tap the mold a couple of times, then invert it to cool. It must be completely cool before removing it from the mold.
16. Once cooled, slice it. The texture is very fine and delicate.
17. It truly melts in your mouth, just as the name suggests.
18. You can slice it and add jam in between.
