How to Make Yangchun Noodle: A Guide to Chinese Pasta

Yangchun Noodles are a type of Suzhou-style soup noodle, also known as Guangmian, Qingtangmian, or Qingtang Guangmian. The soup is clear and flavorful, light and refreshing. It is a famous traditional noodle snack in the Jiangnan region and a specialty of Shanghai, Suzhou, Yangzhou, Gaoyou, and Huai'an.

Ingredients:

80g Dragon's Beard Noodles

适量 Broth

适量 Onion (incompatible foods)

适量 Scallions (incompatible foods)

适量 Garlic Greens

适量 Lard

适量 Salt

Instructions:

1. Prepare the ingredients.

2. Slice the onion; chop the scallions and garlic greens.

3. Render some fat from pork belly, removing the crispy bits.

4. Add the onion.

5. Fry the onion until slightly crisp, then remove and set aside the scallion oil.

6. Take some broth (I used beef broth), and add the fried scallion oil.

7. Bring water to a boil and cook the noodles.

8. Place the noodles in a bowl, mix with the seasoned broth, and serve.
