Celery and Lily Bulbs with Cashews
I. Celery, Cashews, and Lily Bulbs
Ingredients: Celery, Lily Bulbs, Cashews, Goji Berries

Instructions:
(1) Wash and peel the celery, then cut it into diamond shapes; separate and wash the lily bulbs; deep-fry the cashews until cooked and set aside.
(2) Bring water to a boil in a wok, add the celery and goji berries, and blanch briefly before removing and setting aside. In another wok, heat a little oil, add the celery, lily bulbs, and goji berries. Add salt, mushroom powder, and a little water, stir-fry a few times, thicken with a little starch water, and drizzle in a few drops of sesame oil.
II. Stir-fried Tomatoes with Frozen Tofu
Ingredients: Tomatoes, Frozen Tofu
Instructions:
(1) Freeze tofu until hard, then thaw it. Note: After thawing, squeeze out the water and tear into small pieces; wash and chop the tomatoes.
(2) Heat oil in a wok, sauté minced ginger until fragrant, add the tomatoes and stir-fry. Add a little salt, and once the tomatoes release a sauce-like consistency, add the frozen tofu and continue to stir-fry. Season with mushroom powder and serve.
Reminder:
(1) Be sure to squeeze out all the water from the thawed tofu, otherwise the dish will be watery and not tasty.
(2) Salt must be added when stir-frying tomatoes to help them release juice, and this dish is only delicious when cooked down to a tomato sauce consistency.
Broccoli with Tofu
III. Dongpo Tofu
Ingredients: Tofu, Bamboo Shoots, Shitake Mushrooms
Instructions:
1. Cut the tofu into large pieces, dip it in a batter made from flour and salt, then deep-fry in oil until golden brown. Remove and drain the excess oil.
2. In another wok, heat oil, sauté shredded ginger until fragrant, add the bamboo shoots and shitake mushrooms and stir-fry. Season with salt.
IV. Broccoli with Tofu
Ingredients: Broccoli, Tofu (use salted tofu, not soft tofu)
Instructions:
1. Wash the broccoli and cut into small florets; cut the tofu into cubes; slice the red pepper.
2. Heat oil in a wok, pan-fry the tofu over low heat until slightly golden, then remove and set aside. Blanch the broccoli in boiling water for a moment, then remove and drain.
3. Use the remaining oil in the wok to sauté ginger slices, stir-fry the red pepper, then add the broccoli and tofu in order. Gently stir-fry, season with salt, pepper, and mushroom powder, and finally, add a thin starch slurry to thicken.
