Sautéed Potato and Green Pepper
Method 1:
1. Remove the stems and seeds from the green peppers, wash them, and break into pieces;
2. Peel and wash the potatoes, then slice them;
3. Slice the green onions, ginger, and garlic;
4. Heat oil in a wok, add the potato slices and fry until golden brown, then remove and drain the excess oil;
5. Heat oil in the wok again, add the green onions, ginger, garlic, and Sichuan peppercorns to sauté until fragrant. Add the potato slices and green pepper pieces and stir-fry. Drizzle in vinegar, soy sauce, sugar, and salt, and stir-fry until evenly mixed. Sprinkle in MSG and serve.
Method 2:
1. Slice the potatoes thinly, wash them in water, and soak for about 10 minutes before draining.
2. Prepare the condiments: ginger, green onions, and Sichuan peppercorns.
3. Warm the wok and add oil.
4. Once the oil is hot, add the meat to the wok and start stir-frying. When the meat is about 50% cooked, add some soy sauce, stir for a couple more times, then add the ginger, green onions, and Sichuan peppercorns, and stir for a couple more times.
5. Add the potato slices and start stir-frying.
6. Add salt, and when it's almost cooked, add chicken essence.
7. When cooked, remove from the wok and serve.
