Stir-fried Green Beans
Green beans are also known as kidney beans, a cultivated variety of the Phaseolus vulgaris species in the Fabaceae family. They are also called lima beans, flat beans, or cowpeas, and are an annual herbaceous plant. In Quzhou, Zhejiang, they are called "Qingming beans"; in northern China, they are often called "mei beans"; and in some central and southern regions like Sichuan, they are called "four-season beans," making them a common vegetable on the dinner table. Whether stir-fried alone, stewed with meat, or blanched and served as a cold salad, they are very popular. However, they are slightly toxic and should be soaked in clean water (or salted water) for twenty minutes before cooking and consumption. They must be thoroughly cooked before eating.
Green beans are a very common vegetable on the people's tables. They are rich in protein and various amino acids, and regular consumption can strengthen the spleen and stomach, and increase appetite.
