Soybean Chiffon Cake
Ingredients:
4 eggs, 75g soybean flour, 25g cornstarch, 80g fine sugar, 35g salad oil, 95g milk, a few drops of white vinegar, an 18cm chiffon cake pan
Instructions:
1. Separate the egg yolks and whites. Place the whites in a grease-free, water-free, and clean bowl;
2. Add salad oil to the egg yolks and beat until well combined;
3. Add 30g of fine sugar and beat until the yolks turn pale;
4. Add milk and mix well;
5. Add the sifted soybean flour and cornstarch;
6. Mix well with a spatula and set aside. Preheat the oven to 180°C;
7. Add a few drops of white vinegar to the egg whites, then add 50g of sugar in three batches, and beat with an electric mixer until stiff peaks form;
8. Fold in the egg whites into the yolk mixture in three batches, then pour into the pan and gently tap to release air bubbles;
9. Place in the preheated oven on the lower rack and bake for about 38 minutes. After baking, invert the cake, let it cool, then remove from the pan and slice.
