To make the glutinous rice rolls, we first need to prepare the main ingredients: 250g of flour, 200g of glutinous rice flour; and the auxiliary ingredients: 2.5g of dry yeast, 2 Chinese sausages; and seasonings: 3g of salt. The steps for making the glutinous rice rolls are as follows:
1. Mix the flour and salt evenly, then add the yeast and an appropriate amount of water, knead into a smooth dough. Cover the dough with plastic wrap and let it ferment in a warm place;
2. Slowly stir-fry the Chinese sausages until they are fully cooked in color. While the dough is fermenting, add the chopped Chinese sausages to a preheated wok;
3. Add the pre-cooked glutinous rice, and stir and mix the glutinous rice and Chinese sausages completely. Add a small amount of soy sauce and mix evenly;
4. Take out the fermented dough, release the air, roll out the dough, then fold and roll it out again, repeating this process 6 times;
5. Take an appropriate amount of the mixed glutinous rice and place it in a plastic bag, press it tightly with your hand, and then place the pressed glutinous rice on the dough sheet;
6. Slowly roll it up from the end with the glutinous rice (if the dough is too dry, you can lightly brush a layer of water before rolling). Use a knife to cut the rolled dough into equal-sized pieces, place them on a steaming tray lined with parchment paper, and let them rest in a warm place for 30 minutes. After bringing water to a boil over high heat, place the glutinous rice rolls in and steam for about 15 minutes, and it's done.
