1. Pick the old leaves off the spinach, trim the roots, and wash. Blanch in boiling water (turn the spinach over once) until the water returns to a boil. Let it sit for a moment, then remove, drain, and squeeze out excess water. Chop finely, squeeze out water again, and place in a bowl. Add salt and sugar and mix well.

2. Rinse the dried shrimp to remove dust and impurities, place in a small bowl, and cover with hot water (preferably steam for 20 minutes). Once softened, chop finely. Also chop the dried tofu and cooked lean salted pork finely. Add all the chopped ingredients along with the ginger and the soaking liquid from the shrimp to the spinach.
