Then, chop the cashews, vegetable broth, and Thai red curry paste. On a plate, arrange the washed lettuce, then place the marinated coconut meat, radish strips, and cucumber slices. Drizzle with an appropriate amount of the curry cashew sauce. Finally, sprinkle with chopped cilantro and bean sprouts.

Place a whole wheat corn tortilla on a plate. Spread a layer of bean paste, then layer with avocado slices, mustard greens strips, pumpkin seeds, shredded cucumber, and chopped scallions. Roll up the tortilla as you would for Peking duck, then cut it in half.

Shred zucchini, carrots, red bell peppers, and kale. Mix them with edamame, chopped scallions, and sesame seeds in a large bowl. Drizzle with peanut sauce, lemon juice, soy sauce, maple syrup, sesame oil, and minced ginger. Toss everything together. Top with fresh shrimp.

5. Mango Burritos

Mix diced mango, diced red onion, diced red chili, lime juice, olive oil, chopped cilantro, avocado, and cooked black beans. Drizzle with mango sauce and add a pinch of salt. Roll up the tortilla and drizzle with mango juice.
