Can the green tops from onions be eaten, and how can they be prepared deliciously?

Friends who have grown onions should have seen them grow long sprouts. These sprouts look very similar to small green onions, so can they be eaten? The sprouts from onions are edible, but they have a much fresher taste, completely different from the crisp and pungent flavor of onions. There are many ways to eat onion sprouts; they can be used in soups or stir-fries.

I. Can onion sprouts be eaten

Onions that have sprouted and even grown green shoots are edible and will not produce substances harmful to the human body. However, the nutrients in the onion bulb are transferred to the top to support the growth of the sprouts, which leads to a decrease in the original nutritional content and edible value of the onion, and the texture is not as good as before.

Generally, onions tend to sprout at 15°C. Therefore, after buying onions, you can place them in the sun for a while, then store them in a ventilated and dry place to prevent them from sprouting.

Onion sprouts can be eaten. Since the yield is not high, they can only be used as a supplementary ingredient in cooking. They can be made into soups or used as a base for hot pot dishes, which can enhance the umami of the dish without masking their own flavor.

II. How to grow onion sprouts

1. Generally, choose plump, round onions with well-developed roots. The choice of container is also very wide; it can be a plate, bowl, glass, or teacup, as long as it can hold enough water to cover the surface of the onion.

2. After 2 days, several thin white roots will grow from the base of the onion.

3. After 15 days, the tender green leaves gradually grow taller and exceed the height of the onion.

4. After 20 days, the height of the small green onions on top exceeds 20 cm, and it's time to harvest the onion sprouts.

III. How to make stir-fried onion sprouts with eggs

1. Crack three eggs into a liquid, add a few drops of white vinegar and 2 grams of salt (I have a 2-gram salt spoon that came with the salt when I bought it), and mix well.

2. Wash the onion sprouts, chop them finely, add them to the egg mixture, and mix again.

3. Heat a pan, add a little more oil than usual for stir-frying over medium heat. Pour in the mixed egg liquid and stir-fry quickly until they puff up in the hot oil and are cooked through.
