8 Must-Try Recipes for Lazy People

Lazy Person's Coconut Curry Rice

Ingredients

Main ingredients: 1 bowl of rice, 1 potato, 1 onion, an appropriate amount of frozen mixed vegetables, 1 sausage

Seasonings: an appropriate amount of butter, an appropriate amount of pure water, an appropriate amount of coconut milk

Instructions

1. Dice the potato into small pieces (it's delicious even with the skin on, though I was too lazy to peel it)

2. Dice the sausage and onion. Cut out a piece of butter first.

3. Melt the butter in a pan.

4. Once the butter has melted, add the diced onion and stir-fry until a rich aroma of onion fills the air.

5. Add the pre-prepared diced potato, sausage, and frozen mixed vegetables and stir-fry (just for a short while, no need to cook through).

6. Pour in an appropriate amount of pure water, then add some coconut milk. Wait for the vegetables in the soup to cook (don't add too much water, otherwise, you'll be able to drink the curry soup).

8. Turn down the heat. Wait for the curry block to melt and the sauce to thicken. Pour it over the rice and you're done!

Xinjiang Hand-pulled Rice

Lazy Version of Hand-pulled Rice

Ingredients

Main ingredients: 300g lamb leg, 300g rice, 1 carrot, 1 dehydrated purple onion, 3 dried chili peppers

Seasonings: a small piece of ginger, a pinch of black pepper, 1 teaspoon of cumin seeds, 1 spoon of cumin powder, an appropriate amount of salt, an appropriate amount of cooking oil

Instructions

1. Select the lamb leg. For a family of three, this amount will be slightly generous. About 200g of lamb leg is sufficient. Thaw and cut into small pieces for later use.

2. Prepare the required ingredients. 300g of rice, one carrot, one purple onion, and a small piece of old ginger.

3. Wash the rice clean, soak it in clear water, and let it sit for about 10 minutes.

4. When preparing the cumin, it's best to have both cumin powder and seeds, especially if you really love the taste of cumin. The flavor of cumin seeds is more intense, and they provide a better texture, especially when steamed with the rice.

5. Peel the carrot and cut into small cubes. Chop the onion.

6. Heat a wok, add an appropriate amount of cooking oil, then add the lamb and stir-fry until it changes color. Next, add the ginger, dried chilies, and cumin powder, and stir-fry quickly.

7. Then, add the purple onion and carrot cubes, add an appropriate amount of light soy sauce, grind some black peppercorns, and add the cumin seeds.

8. Add an appropriate amount of salt.

9. Add a small cup of boiling water and turn off the heat once it comes to a boil.

10. Pour the soaked rice into a rice cooker.

11. Pour the stir-fried ingredients into the rice and give it a quick stir.

12. Turn on the rice cooker. Use the steaming function; it will take about 45 minutes.

13. The fragrant hand-pulled rice is ready! The broth is flavorful, the rice is fragrant and glutinous, the carrots are perfectly tender, and the lamb is savory. Everything is absolutely perfect!

14. Serve a bowl immediately. So fragrant! A bowl of lamb hand-pulled rice can drive away the fatigue of the day and bring the family together with its rich, happy flavor. This is the taste of home.

Lazy Person's Rice Cooker Scallop and Shrimp Rice

Ingredients

Main ingredients: a small handful of scallops, a small handful of dried shrimp, 1 cup of rice, an appropriate amount of hot water

Seasonings: a little soy sauce, a little chopped green onion

Instructions

1. Wash the scallops and dried shrimp. Soften them in hot water. (Add a bit more water than you would normally use for cooking rice. For example, if you use one cup of rice, add about one and a quarter cups of water for soaking, as the ingredients absorb a lot of water).

2. Once softened, shred the scallops apart.

3. Wash the rice. Place the scallops, shrimp, and their soaking water into the rice cooker, press the button, and start cooking.

4. Once cooked, mix in some soy sauce and chopped green onions, and it's ready to serve.
