Beef and Potato Stir-fry
Coating with starch. Take a certain amount of dry starch (cornstarch, potato starch, etc.), mix it with water in a 1:2 ratio to make a wet starch slurry. Mix the wet starch slurry with the cut beef, mix well by hand, and let it sit for 30 minutes. Once the starch slurry evenly coats the surface of the beef, you can start stir-frying. During the stir-frying process, the added starch gelatinizes, forming a layer on the surface of the beef, which locks in the moisture. This ensures the stir-fried beef is fresh, tender, and soft.
Coating with egg white. After slicing the beef, add an appropriate amount of egg white and mix well. Let it sit for 30 minutes before cooking. During the cooking process, the egg white mixture coagulates due to heat denaturation, which reduces the loss of moisture and nutrients from the beef, making the meat smooth and tender. Coating with egg white is often combined with starching for better results.
Adding beer. Drizzling an appropriate amount of beer over the beef and marinating it for 30 minutes before cooking is also a good option. The enzymes in beer can break down some of the proteins in the beef, thereby increasing its tenderness. However, because the enzyme content in beer is relatively low, the tenderizing effect of this method is not as good as the previous two.
Finally, to stir-fry tender beef, it's best to choose lean and tender cuts when buying, such as tenderloin or sirloin. Also, be sure to cut against the grain of the meat, and the thinner the slices, the better. This way, the stir-fried beef will be more tender.
