Kelp is the seaweed with the highest iodine content, generally containing 3-5%, with a maximum of up to 7-10%. The iodine in kelp can be directly absorbed by the human body.

Many households store some dried kelp, keeping it without an immediate plan to eat it. Some people believe it can be stored for a long time, just like other seafood products.

1. When eating kelp, it should be cleaned thoroughly, soaked in water according to its condition, with the water changed frequently, generally for more than 6 hours. If the kelp becomes mushy and loses its texture after soaking, it has spoiled and should not be eaten.

2. In fact, kelp should be eaten as soon as possible after purchase. If it cannot be finished, the opened kelp should be refrigerated in a refrigerator or freezer. During storage, factors like temperature and light can degrade its nutritional content. Conversely, microorganisms will continue to multiply, and harmful substances will increase. These reasons will cause the kelp to spoil and become inedible.

A Trick to Soften Kelp

Method One: Loosen the dried kelp and steam it in a steamer for about half an hour. Then, soak it in clean water overnight.

Method Two: Soak the kelp in rice washing water, or add a small amount of edible alkali or baking soda when boiling it. Do not add too much. Once softened, rinse the kelp in cold water, clean it, and it is ready to eat.
