According to a report by the British Daily Mail on April 22, a new study announced at the Boston annual meeting of the American Society for Biochemistry and Microbiology has found that mushrooms are also an important source of vitamin D. This research also suggests that the vitamin D content in dried mushrooms, after being air-dried, is higher than that in freshly picked mushrooms.

Researchers recommend that after buying fresh mushrooms, open the package and place them in the sun for one hour. The optimal times for this are between 10 AM and 3 PM in the spring and summer. After sun-drying, the mushrooms can be cooked and eaten, and their vitamin D content is not easily lost.
