Steps for Eggplant meatballs

Peel and wash the eggplant and cut it into the shape you like. I cut it into hob pieces.

Cut half of the green pepper into slices.

Cut the tomatoes into slices.

Put a little more oil in the pan, add the onions, ginger and garlic and stir fry until fragrant, then add the eggplant and stir fry.

Add the tomatoes and stir fry well.

Add the frozen meatballs and stir fry, add 1 bowl of water, and simmer over low heat until the soup is almost dry.

Add green pepper slices, stir fry well, add salt and serve out.
