Mastering Sweet and Sour Pork: A Culinary Guide

Sweet and sour pork, a beloved dish with roots in Chinese cuisine, tantalizes taste buds with its perfect balance of tangy, sweet, and savory flavors. Here’s a step-by-step guide to creating this classic at home.

Ingredients:

500g pork ribs, cut into bite-sized pieces; 2 tbsp soy sauce; 1 tbsp Shaoxing wine; 1 egg, beaten; ½ cup cornstarch; 1 cup sugar; ½ cup vinegar; 2 tbsp ketchup; 1 cup water; 1 bell pepper, cubed; 1 pineapple chunked; 2 cloves garlic, minced; 1 tsp ginger, grated.

Instructions:

1. Marinate the ribs: Toss pork with soy sauce, Shaoxing wine, and egg. Let sit for 20 minutes, then coat with cornstarch.

2. Deep-fry: Heat oil to 180°C. Fry ribs until golden (5-6 minutes), then drain.

3. Make the sauce: In a pan, dissolve sugar in water, add vinegar, ketchup, garlic, and ginger. Simmer until thick.

4. Combine: Add ribs, bell pepper, and pineapple to the sauce. Stir-fry for 2-3 minutes until coated.

5. Serve: Garnish with sesame seeds and enjoy with steamed rice.

Tips: For extra crispiness, double-fry the ribs. Adjust sugar-vinegar ratio to taste. This dish pairs beautifully with fresh veggies, offering a delightful contrast of textures and flavors.
