Steps for French eggplant

1
Remove the stems, wash and peel the eggplant, cut it into 0.6 cm thick slices, and marinate with salt for 10 minutes. This is eggplant peel... Forgot to take the eggplant slices:P
2
Making steamed buns minced: 1 high-pressure steamed bun (almost 100 grams) is air-dried-peeled-and used a planer to finish.
3
Beat the eggs into a bowl and stir with chopsticks into egg liquid. But I think it's more convenient to use a spoon.
4
Squeeze the marinated eggplant slices to remove the water, dip them in flour and drag the whole egg mixture, then dip them in bread crumbs and pat solid. Put the oil in the pan, heat it to 50 to 60%, add in the tomato steaks and fry them until they are purple-red, remove and drain the oil.
5
Place it on the plate.
6
Put the ketchup into a spoon and stir-fry for a while, add salt, put white sugar into a small bowl, and dip it when serving.
7
I also added a small bowl of hot sauce. You can also add black pepper. It tastes crispy on the outside and tender on the inside. It is extremely delicious, with one word 'fragrant'.French eggplant Make Tips
Key: After marinating the eggplant slices, squeeze out the water as much as possible, then coat them in flour. Eat with ketchup, and they feel just like french fries.
