Steps for Shanxi pulled noodles

1
Mix the dough, mix the flour with appropriate amount of salt, add appropriate amount of warm water and knead into dough.
2
Prepare a plate and evenly coat the bottom of the plate with a layer of cooking oil.
3
Knead the kneaded dough into a cylinder of suitable size, place it into a plate with oil on the bottom, brush the top, bottom, left, and right of the noodles with a layer of oil, cover with plastic wrap and let stand for about 30 minutes.
4
After 30 minutes, take out one portion and flatten it with a rolling pin, and press it horizontally in the middle with chopsticks.
5
Pick up another pot and put a proper amount of water to boil for later use. Grab both ends of the dough sheet with your hands, pull it up and stretch it on the chopping board, tear it apart from the middle mark and place it in the boiling water pot to cook;(I can't take pictures because I am using both hands, so I'm sorry;).
6
During cooking noodles, they can be used to mix the juice. Put salt, chicken essence and coriander, fried chopped green onion and appropriate amount of onion oil, soy sauce, and mature vinegar into a bowl; the amount of these seasonings is added according to your personal taste.
7
After the noodles are cooked, first put a small amount of noodle soup into a bowl, melt the seasonings and mix well.
8
Then, take out the cooked noodles and add a small amount of sesame oil to eat; it's not a lie, it's very fragrant!!
