    Wash all tools and control them dry to make them oil-free and water-free. Pick out rotten and flattened grape beads, wash the whole bunch of grapes under the faucet, and dry until there are no drops of water on the surface. Do not rub with your hands when washing, because fermentation requires the use of white frost on the grape skin (with a large amount of wild yeast on it) for fermentation.

    Wash your hands, crush the grapes, and squeeze all the grape meat, skins and seeds into the main fermentation vessel. Load the grapes to about 70% of the fermentation capacity, add the rock sugar at a ratio of 10:1, stir well, cover, but do not tighten it completely. During fermentation, a large amount of carbon dioxide gas will be produced, and wine juice will overflow if it is too full; if the lid is tightened too tightly, the bottle may explode; in addition, grape fermentation also requires trace amounts of oxygen.

    Place the fermentation vessel with the grapes in a cool, ventilated place. Grapes will ferment in about 12 hours, and many bubbles will be produced in the grape juice. After the grapes are fermented, press the grape skins into the wine twice a day with wooden sticks or chopsticks, and then cover them. After about a week, the bubbles decrease and there is no need to stir. The lazy man's approach is to ignore it from now on, leave it for 1-2 months (depending on the season and room temperature), when the grape skins and seeds float above and the grape juice below.

    Filter the wine juice with gauze or dregs filter bag, put it into an oil-free and water-free glass bottle or plastic bottle, and place it in a cool place to drink at any time.

    1. When selecting grapes, choose ones with green stems, deep color, and plenty of white frost. 2. The utensils used must be completely oil-free and water-free; otherwise, white mold is prone to growing during the fermentation process. If white mold appears, remove the affected part, wipe the bottle wall at that spot clean with an alcohol-soaked cotton swab, and add a few drops of high-proof white spirit. 3. While wine is beneficial, excessive consumption should be avoided. Men should limit their intake to under 150cc per day, and women under 100cc. It is recommended to drink it during meals or 30 minutes before bed to prevent acid reflux from lying down.
