Steps for Purple sweet potato sago

1
Put the sago into a casserole, add water, and bring to a boil (stir with a spoon until the sago is transparent, about 10 minutes).
2
Rinse the cooked sago with cold water and set aside.
3
Pretreat the purple potatoes, cut them into cubes, boil a pot of water, add the purple potatoes after the water boils, simmer over low heat for 15 minutes, strain the water in the pot, and soak the purple potatoes in the water for later use.
4
Add appropriate amount of water, rock sugar, and half a teaspoon of white sugar to the pan and boil. After boiling, add sago and purple potatoes, stir, then add coconut milk, egg milk, and starch aqueous solution.Purple sweet potato sago Make Tips
1. It is best to rinse the purple sweet potatoes multiple times; I rinsed mine repeatedly 4 times. This is mainly to make the color of the soup look good; otherwise, it will be extremely purple, which is a bit scary.
2. Using cold water on the cooked sago is to prevent them from sticking together during later cooking.
